Avocado and eggs!
You have probably heard of the 2 ingredient pancake using bananas and eggs. But have you tried doing the 2 ingredient pancake using avocado and eggs? Well I did and it is delicious! As Julia Child said – “You don’t have to cook fancy or complicated masterpieces. Just good food from fresh ingredients.”
SERVES 6
INGREDIENTS
1/2 avocado peeled and mashed
2 free range eggs beaten
METHOD
Mix the mashed avocado with the beaten eggs.
OPTIONAL: add a dash of cinnamon or sea salt if you wish.
Heat pan with coconut oil.
Spoon in mixture.
Serve with any toppings: strawberries, bananas, honey, nuts or seeds! Enjoy!
