This pie is a favourite at our kids can cook class. Its easy to prepare and the kids love creating their own masterpieces.
It also encourages kids to eat apples. We have created a healthier version of the pie using organic products like Bob's Red Mills Flour, grass-fed butter and coconut sugar!
INGREDIENTS
2/3 grass fed butter
2 tbsp coconut sugar
1 3/4 cup Bob Red Mill’s unbleached white flour + extra for dusting
1 tbsp of water
2 tbsp coconut sugar
1 tsp cinnamon
1/3 cup ground almonds
METHOD
Line baking sheets
Mix soften butter, 1/3 cup of coconut sugar and 1 egg into food processor.
Mix until smooth and creamy.
Add flour and 1 tbsp of water and mix into batter until it becomes a ball.
Place the ball into a floured surface and smooth it out. Cover with plastic and chill for 30 minutes.
Pre heat the oven to 400 degrees.
Cube the apples and mix in a bowl with cinnamon, coconut sugar and almonds.
Divide the pastry ball into 6 pieces. On the lightly floured surface roll the each piece into thin circles.
Then place on lined baking sheet.
Brush the pastry with egg and sprinkle with ground almonds, add the apple mix.
Gather the ends of the pastry to make open topped pies.
Brush the outside of the pies with egg.
Place a small piece of butter on top of the fruit.
Bake the pies for 25 minutes or until golden brown.
