Apples are a brilliant source of probiotics which help good bacteria thrive in the gut, and this dish has great anti-inflammatory properties. Add a little vanilla coconut cream and you have a decadent treat for the most discerning!


INGREDIENTS

METHOD

  1. Preheat oven to 300 degrees

  2. Place the apples in a heavy based ovenproof dish and sprinkle with the cinnamon and a little water.

  3. Bake in the oven for 15 minutes until soft. Meanwhile, remove the top creamy part of the coconut milk from the tins and place in a bowl.

  4. Add the vanilla and whisk until smooth and creamy.

  5. Keep in the fridge until ready to serve.

  6. To serve, spoon the cooked apples into four ramekins and put a dollop of cream on top.
