Apples are a brilliant source of probiotics which help good bacteria thrive in the gut, and this dish has great anti-inflammatory properties. Add a little vanilla coconut cream and you have a decadent treat for the most discerning!
INGREDIENTS
4 apples peeled and chopped into bite-sized cubes
1 tsp Ground Cinnamon
1 tsp Vanilla Extract
2 in tins coconut milk cooledthe fridge for 3 hours minimum
METHOD
Preheat oven to 300 degrees
Place the apples in a heavy based ovenproof dish and sprinkle with the cinnamon and a little water.
Bake in the oven for 15 minutes until soft. Meanwhile, remove the top creamy part of the coconut milk from the tins and place in a bowl.
Add the vanilla and whisk until smooth and creamy.
Keep in the fridge until ready to serve.
To serve, spoon the cooked apples into four ramekins and put a dollop of cream on top.
