Apples are a brilliant source of prebiotics which help good bacteria thrive in the gut, and this dish has great anti-inflammatory properties.
Prep Time: 15 minutes Cook Time: 15 minutes
INGREDIENTS: 4 apples, peeled and chopped into bite-sized cubes 1 tsp ground cinnamon 1 tsp vanilla extract 2 tins coconut milk, cooled in the fridge for 3 hours minimum I prefer making my own coconut milk using dry coconut and blending it with water, strain and voila!
METHOD:
Preheat oven to 300 degrees
Place the apples in a heavy based ovenproof dish and sprinkle with the cinnamon and a little water.
Bake in the oven for 15 minutes until soft.
Meanwhile, remove the top creamy part of the coconut milk from the tins and place in a bowl.
Add the vanilla and whisk until smooth and creamy.
Keep in the fridge until ready to serve.
To serve, spoon the cooked apples into four ramekins and put a dollop of cream on top.
