Bite Size Pan de Jamon







With Christmas in the air and my love for the traditional Venezuelan Pan de Jamon, this bite size appetizer was created.


Not to mention having my Keto, Sugar/Flour Detox and Hormone Balance clients in mind to maneuver through the Christmas food festivities, without giving into the flour and sugar but staying on track, I am determined to show YOU that healthy eating is doable no matter what occasion.

Here are the ingredients I used:

  • 1 cup of grated parmesan (cheddar or mozzarella can also be used)

  • 2.5 cups almond flour plus a bit more (see method below)

  • 3 Eggs

  • 1 tbsp of melted butter or garlic butter for more flavor

  • 1tsp baking soda.

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 lb. chopped Christmas ham or your ham of choice.

  • 1/3 cup chopped olives.

  • 1/3 cup red sweet peppers

  • Sea Salt and Black Pepper

Method:


In a mixing bowl, mix together egg, butter and cheese. Add in olive oil, apple cider vinegar, baking soda, salt/black pepper. Mix well and then add in ham, olives and sweet peppers. Combine them evenly.


If the mixture is too wet, then you can add a bit more almond flour.


In a separate bowl, add some almond flour to coat the balls.

Using gloves or wet your hands with some olive oil put a tbsp of the mixture into your hand and mold it into a ball. Do this repeatedly - you should get about 20 -25 balls with the mixture. Once formed, coat the balls with the almond flour and place it into a lightly greased baking sheet.





Place into a heated 350-degree oven and bake for about 8-10 minutes or until golden brown. You can turn the balls over halfway through the baking time.


These freeze well to be eaten at a later time.
