Chocolate Quinoa Breakfast Bowl

YESSS who would have thought that you can use Quinoa PLUS Chocolate and turn it into a chocolate quinoa breakfast bowl.

Quinoa as you may have heard is a super food. It is a good source of a number of important nutrients, including folate, magnesium, zinc, and iron. It’s also rich in fiber and protein, nutrients that play an important role in helping you feel full.

Chocolate is one of those things that you totally don't associate with breakfast. Chocolate means sweet treat in my world – it's something you have as a treat, not as a way to start your day. Right?

Actually…NO! Chocolate is rich in nutrients and is actually a great thing to add to your morning routine. It's packed with vitamins, minerals, and antioxidants. All of which are amazing for your body.

Putting these two amazing ingredients together and makes a wonderful breakfast bowl not only for you but for your kids too.

Ingredients

  • 1/4 cup quinoa (toasted and then cooked in water)

  • 2 tablespoons unsweetened cocoa powder

  • 4 tablespoons plant protein powder

  • 1/2 cup unsweetened almond milk

  • 2 tablespoon unsweetened almond butter or peanut butter

  • 1 tsp cinnamon

  • 2 tbsp honey or sweetener of your choice

Topping ingredients:

  • Fruit of your choice

  • Dehydrated Fruits (coconut, blueberries, goji berries etc)

  • Nuts ( almonds, walnuts)

  • Pumpkin seeds

  • Dark chocolate (for topping)

Instructions

  • Combine all ingredients into a small saucepan (minus the toppings and chocolate chips). Mix together until fully incorporated.

  • Transfer to a bowl, top with your choice of toppings and chocolate chips, and enjoy!

Note: If you wish to serve and eat this breakfast bowl hot, simply cook the quinoa in your almond milk, then add the ingredients and mix well. Then serve onto your bowl and top it up with your favorite toppings.
