Coconut Milk

I am not always prepared and have time to make everything from scratch. One of those times is when I am making coconut milk. Cracking a mature coconut can seem hard and the technique may not be right each time. So I am so thankful when I came across Bob Red Mill’s coconut flour. If you check out the ingredients it just says: Coconut!

And now the technique to home-made coconut milk is much easier and convenient.

Just add water, perhaps a pinch of salt and a touch of honey and voilá! you’ve got dairy-free milk for your coffee, cereal or to dip your cookies in without the harmful dairy effects. Plus coconut has so many added benefits like: It is anti-carcinogenic, anti-microbial, anti-bacterial, and anti-viral. The main saturated fat that it contains, lauric acid, is also found in mother’s milk and has been shown to promote brain development and bone health.
