Flax seed Crackers

I have been making almond crackers for some time now. Sometimes I would add flax seed to the mixture while other times I would just make the mix with pure almond meal. Then one day while getting the ingredients together and realizing I didn't have any more almond meal but only flax meal, I decided to try out the crackers with just flax seed meal and see how they come out.

It was a success! The texture was great and held up perfectly. I added a bit of olive oil, sea salt, black pepper and water to the mix. It was just as easy as the almond cracker recipe.

Here is what I did:

1 cup flax seed

1 teaspoon extra olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1/3 cup water

Instructions:

  • Mix all the ingredients together in a bowl with a spoon. Roll into a ball, if the dough feels sticky, then add in a more flax meal.

  • Roll the dough between two sheets of parchment paper, until thinly flatten about 3 mm thick. Remove the top sheet. Cut the flattened dough into squares and with a fork poke a few holes on each square.

  • Sprinkle with a bit more salt and bake at 350 degrees for about 20 minutes or until golden. Let it cool and serve with your favorite dips.

Flax seed is great for hormonal health, digestive issues like constipation. Great for balancing blood sugars and diabetes, lowering cholesterol and heart diseases.

Additionally it's high in antioxidants, fiber and Omega 3's.
