I remember when I was a child climbing ‘Grandpa Bennett’ mango tree and picking every single mango I can get my hands on. Whether it was green or bright orange, I knew it wasn’t going to waste. Learning as a child to make chow from green mangoes, eating the ripe juicy orange ones and freezing the over ripe soft mangoes. There was no judgement of the size nor colour of the mango as it was always a delicious treat, that was devoured by everyone in my family, especially my Grandfather who mostly enjoyed the ones that the birds got to first.
And now as an adult, enjoying a mango always brings back childhood memories that will always be cherished. I knew back then that mangoes did something wonderful for my body, as it brought a sense of satisfaction, it brought family together and it always felt like a good treat.
It’s Avocado and Mango season which means I am in my glee! These two seasonal fruits are my ultimate favorites and a double whammy when they bear at the same time.
Today I want to share with you my Mango & Avocado Fiesta Salad and guess what?

The flavours and textures in this salad are perfectly balanced, which makes me excited as it’s as good as it is delicious. I can’t wait for you to try it, so here is what you will need:
SERVES 4
INGREDIENTS
1 ripe mango peeled and chopped
1 avocado chopped
1 large cucumber (peeled seeded and chopped)
2 Seasoning Peppers not hot
3 tbsp chopped cilantro
DRESSING
3 tbsp fresh squeezed lime juice
3 tbsp extra virgin olive oil
1 tbsp honey
1/4 tsp sea salt
Add the Dressing to the bottom of the bowl and then add the chopped ingredients. Then gently toss it together. Store in an airtight glass container in the refrigerator up to 3 days.
