No Bake Yogurt Cheesecake


If you are looking for an easy dessert recipe you can whip up in no time, you are in the right place. Who has time for baking right? When you can make a no bake dessert in minutes. However, you must leave the cheesecake to sit and settle in the freezer for a bit.


I used a combination of cream cheese with Guiltless Blueberry Yogurt (local yogurt product in Trinidad) to make the cheesecake mixture.


For the base you can either use graham crackers crust or a combination of almond flour and butter to make your crust.










Once you have the base, you can fill it with the following ingredients:


  • 12 oz cream cheese,

  • 1 - 7-ounce blueberry flavored yogurt

  • 1.2 tbsp lemon/lime juice

  • 2 tsp vanilla essence

  • 1/2 cup blueberry jam puree (find my blueberry jam recipe here)

  • 1/2 cup blueberries, for garnish


METHOD:


Graham or almond flour Cracker Crust:

  1. Mix the graham crackers crumbs or the almond flour with melted butter. Press the mixture into the bottom and about 3/4 inch up the sides of a 9-inch pan.

Blueberry Cheesecake:

  1. Beat the softened cream cheese for two minutes. Add the blueberry flavored yogurt, lemon juice, and vanilla and mix until smooth. Gently stir in the blueberry jam puree until just combined. Scoop the blueberry cheesecake mixture into the pan and spread it out over the crust, cover and refrigerate for at least one hour, or overnight.

  2. Top with fresh blueberries before serving.


NOTE: You can use any flavored yogurt if you wish to make a different flavor other than blueberries and make to suit your liking.
