Red Thai Curry Shrimp

Here’s a delightful Red Thai Curry Shrimp recipe for you:


Ingredients:

  • 1 lb. shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, grated

  • 2-3 tablespoons red curry paste (adjust to taste)

  • 1 can (14 oz) coconut milk

  • 1 bell pepper, sliced

  • 4-5 tomatoes cut in cubes

  • 1 carrot, sliced

  • 1 cup snow peas (optional)

  • 1 tablespoon Liquid Aminos soy sauce

  • Juice of 1 lime

  • Fresh cilantro, chopped (for garnish)

  • Cooked cauliflower rice (to keep it keto-friendly) or jasmine rice (for serving)



Instructions:

  1. Heat oil in a large pan over medium heat. Add the onion, garlic, and ginger. Sauté until the onion is soft and translucent.

  2. Add red curry paste to the pan, stirring well to combine with the onions and spices. Cook for about 2-3 minutes.

  3. Pour in coconut milk and broth, stirring to combine. Bring the mixture to a simmer.

  4. Add bell pepper, carrot, tomatoes and snow peas to the pan. Cook for about 5-7 minutes, until vegetables are tender but still crisp.

  5. Add shrimp to the curry and cook until they turn pink and opaque, about 3-4 minutes.

  6. Stir in Aminos soy sauce. Adjust seasoning to taste.

  7. Squeeze lime juice over the curry and stir well.

  8. Serve hot over cooked jasmine rice and garnish with fresh cilantro.
