Strawberry Chia Jam

This recipe applies the same if you want to make a Blueberry Chia Jam

INGREDIENTS:

  1. 1 lb of either fresh or frozen strawberries

  2. 3 tbsp honey or agave – if you want it sweeter you may add 1 more tbsp

  3. 2 tbsp Chia seeds

METHOD:


Heat a medium saucepan over medium heat and add the strawberries. As the strawberries start to soften up and form a juice, add the honey or agave. Stir them around. Once the strawberries start to fall apart, use a potato masher or a fork to break them up.Let the mixture come to a boil stirring them continuously, as it bubbles then add the 2tbsp of Chia seeds.


*Note – the Chia seeds help the jam achieve a gelatinous texture while adding fibre, protein and healthy fats.


Continue stirring for another 15 minutes and then remove the pan from the stove.


*Note – if you like your jam smooth, you can blend the mixture. If not, leave it chunky.


Cover the jam and let it cool to a room temperature before placing it in the fridge.


The Chia seeds will work their magic and achieve a jam like texture in 2-3 hours.

Enjoy the jam on toast, crackers, yogurt, over oatmeal or even ice cream.


*If you wish to preserve the jam for a longer period, you can add 1tsp of fresh squeeze lime juice.
