Simple & Sweet Keto Cookies

Low carb cookies that are soft, easy to make and best part fit perfectly into a healthy keto diet.


Ingredients:

  • 1 cup almond flour

  • 2–4 tablespoons sugar-free chocolate chips (milk or dark, keto-approved)

  • 2 tablespoons powdered erythritol, monk fruit or stevia powder (adjust sweetness to your preference)

  • 1/4 teaspoon salt

  • 1/8 teaspoon baking soda

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon pure vanilla extract

  • 2–3 teaspoons milk of choice (add as needed)


Optional:

•Additional keto-approved milk or dark chocolate chips for melting and drizzling


Method:

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking tray with parchment paper.

  2. Mix the Dry Ingredients: In a mixing bowl, combine the almond flour, powdered erythritol, salt, and baking soda. Stir well to ensure everything is evenly distributed.

  3. Add the Wet Ingredients: Add the melted coconut oil, vanilla extract, and 2 teaspoons of milk to the dry ingredients. Mix until a dough forms. If the mixture seems dry, add the remaining teaspoon of milk gradually until the dough comes together.

  4. Fold in the Chocolate Chips: Gently fold in the sugar-free chocolate chips, ensuring they are evenly distributed throughout the dough.

  5. Shape the Cookies: Scoop small portions of the dough and roll them into balls. Flatten slightly to form cookie shapes and place them on the prepared baking tray.

  6. Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden. Be careful not to overbake as the cookies will continue to firm up as they cool.

  7. Optional Chocolate Drizzle: For an extra chocolaty finish, melt additional keto-approved chocolate chips (milk or dark) using a double boiler. Once melted, drizzle the chocolate over the cooled cookies for a decadent touch.

  8. Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your keto-friendly treats!
