Vegan Mock Mayo


One of my to-go recipes when prepping for my Plant based Health Cleanse Programs.


It always comes back with a top review.


This Vegan Mock Mayo is made with lima or butter beans giving it a creamy texture and making eating Plant Based more doable than not!


Here is the recipe:

You will need :

  • 13/4 canned (drained) or cooked lima/butter beans

  • 2 tbsp fresh lemon juice

  • 1 tbsp white wine vinegar or additional fresh lemon juice

  • 4 cloves of garlic

  • 1.2 tsp sea salt

  • 1/4 tsp mustard

  • 1/2 cup extra virgin olive oil



Method:

  • Place the beans, lemon juice, garlic, sea salt, vinegar, mustard and olive oil in a food processor or blender.

  • Process till creamy, drizzle more olive oil if need be.

  • Continue processing until well blended and completely smooth, stopping to scrape down the sides of the container as needed.

  • Refrigerate and use as needed!
